Crema Mexicana - Don Francisco Preferred Three Parts by Volume
Cotija Cheese - Grated - Don Francisco Preferred One Part by Volume
Diced Canned Chiles - Drained One Small Can Per Quart
Mix Crema,, Cotija, and , Chiles Thoroughly
Allow to Rest Thirty Minutes - Refrigerated
Wash Mushrooms - Allow to Dry Thoroughly
Yes, I Said “Wash Mushrooms”
Remove Stem
Invert - Place on Sheet Pan
Fill Cap Loosely With Mixture
Sprinkle With TGG© Chile Guajillo Molido
Preheat Grill
Place Mushrooms Cap Down on Upper Shelf or Indirect Heat
Grill (4-8 minutes) Until Mixture is Warm and Gooey - Mushroom Will Look
Leathery
Remove to Serving Platter
This Two Guys Grilling© recipe can also be prepared in the broiler
of your oven. Convection does a great job. Try to find mushrooms that the
gills are not visible. The head has not opened. Freeze the mushroom stems
(after a short visit to the grill, spritzed with XVOO) for vegetable stock.
Raw mushrooms do not seem to freeze as well as cooked ones.
