Grilled Cajun Eggplant (Vegan)

Never having seen the man in the red suspenders grill eggplant, I thought I would give it a shot. Inexpensive, nutritious and tasty are three of my brother Ben’s (the Rabbi) favorite words. He is a devout vegan, and sometimes new vegan recipes are hard to come by.

Eggplant sliced 1/2 inch thick
Extra Virgin Olive Oil
Two Guys Grilling© Cajun Spice

Spritz Eggplant with Extra Virgin Olive Oil

Place on hot grill 30 to 90 seconds per side
Remove to serving platter

With just three ingredients, Cajun Eggplant is a really quick and easy dish.
