Grilled Chicken Curry

During our test kitchens a common practice is to arrange a variety of herbs and spices as a “what if.” At this particular session a jar of dry curry caught my eye. The chicken was there, but what to marinate it with? I rustled up some apple juice and here it is:


1/2 tsp Dry Curry Powder
1/2 cup Apple Juice
2 Chicken Breasts

Combine apple juice and curry powder. Mix thoroughly.
Allow to stand for 20 min

Place chicken and marinade in a zip top bag, seal.
Refrigerate 20 - 40 min

Place on grill
Grill two to three minutes, Turn over
Grill two to three minutes
Rotate ninety degrees
Repeat until done

You can add garlic or other favorites, but the test panel loved the delicate flavor of this three-ingredient dish.
