Grilled Lettuce Wedge
I first encountered the ”Wedge” at a Texas style steakhouse. It was really refreshing. I have never been known to leave a good recipe alone, so I tinkered a little. A little was all it took.
1 Head Iceberg Lettuce - Cut to 1/8 Wedges, Core Removed
The Dana Point Trinity©
*Two Guys Grilling© Mediterranean Sea Salt (lightly)
*Two Guys Grilling© Fine Ground White Pepper (light dusting)
*Two Guys Grilling© Granulated Onion (generously)
Extra Virgin Olive Oil
Preheat Grill to Hot
Dust Lettuce Wedges with the Dana Point Trinity©
Allow to rest for five to ten minutes
Spritz with Olive Oil
Place on Hot Grill
Grill 30 to 45 seconds
Turn
Grill 30 to 45 seconds
Remove to Serving Plates
Dress your Lettuce Wedges with Achiote/Annatto infused Olive Oil, a hearty vinaigrette, or your favorite salad dressing. I like a good quality Blue Cheese (my apologies to our Vegan audience). When grilling turn gently so as not to break up the wedges. If you are really adventurous, dust the Wedge with Two Guys Grilling© Chile Chipotle. This recipe works equally as well in a grill pan or frying pan. Let me know what you think.
