Greg Carbone’s Grilled Onion Slabs


Greg Carbone has been a friend of Two Guys Grilling© for some time now. As a manufacturers representative for a major grill manufacturer, and a sometimes vegetarian, he knows his stuff. Greg went wild for this recipe.


Onions (White, brown or red)
Extra Virgin Olive Oil
Dry Basil (Or your favorite dry herbs)
*The Dana Point Trinity©
*Two Guys Grilling© Mediterranean Sea Salt
*Two Guys Grilling© Fine Ground White Pepper
*Two Guys Grilling© Granulated Onion


Peel Onions
Slice into 3/4 inch slabs
Place in zip top bags
Add Extrta Virgin Olive Oil to cover
Sprinkle with Basil (He is Italian) and The Dana Point Trinity©
Refrigerate for 24 hours, Remove to platter
Place on hot grill
Grill for one to one and a half minutes
Turn over, Grill for one to one and a half minutes
Remove to serving platter


As an entree for vegetarians, or a side dish for carnivores, the flavor can’t be beat.
