Potato Packets
Similar recipes have been favorites for many families.
Through
experimentation I found that a combination of butter and olive
oil maximizes flavor and reduces sticking.
What you will need:
Aluminum Foil
Potatoes
(Russets or Baking)
Onions (Brown or White)
Seasonings:
*Kosher Salt
*Fine Ground White
Pepper
*Onion Powder
Garlic / Herb Powder
(I like fresh
rosemary)
Ingredients:
Olive Oil (Infused is good)
Butter
(2 pats top & bottom)
- Cut potatoes into 1/2" sticks
- Slice onions fairly thin
- Tear off 2" length of foil
- Fold in half
- Unfold
- Place 2 pats of butter & 2 Tbs of Olive Oil on one of the halves
- Arrange vegetables
- Season to taste
- Place 2 pats of butter & 2 Tbs of Olive Oil on top
- Refold
- Fold the 3 open sides to seal
- Cook on grill at med heat for 30 - 35 minutes (turning every 5 - 7
mins)
OR
Bake in oven at 350° for 30 to 35 minutes.
