Potato Packets

Similar recipes have been favorites for many families. Through
experimentation I found that a combination of butter and olive oil maximizes flavor and reduces sticking.

What you will need:
Aluminum Foil
Potatoes (Russets or Baking)
Onions (Brown or White)

Seasonings:
*Kosher Salt
*Fine Ground White Pepper
*Onion Powder
Garlic / Herb Powder
(I like fresh rosemary)

Ingredients:
Olive Oil (Infused is good)
Butter (2 pats top & bottom)

  1. Cut potatoes into 1/2" sticks
  2. Slice onions fairly thin
  3. Tear off 2" length of foil
  4. Fold in half
  5. Unfold
  6. Place 2 pats of butter & 2 Tbs of Olive Oil on one of the halves
  7. Arrange vegetables
  8. Season to taste
  9. Place 2 pats of butter & 2 Tbs of Olive Oil on top
  10. Refold
  11. Fold the 3 open sides to seal
  12. Cook on grill at med heat for 30 - 35 minutes (turning every 5 - 7 mins)
    OR
    Bake in oven at 350° for 30 to 35 minutes.
