Smoked Doheny Pork Chops

For this class, we have sliced the fresh loin into chops. Cut Loin Chops direct from the whole loin just before you prep them. One to one-and-one-half inch thick.

Season with The Dana Point Trinity© (liberally with Granulated Onion)
Season lightly with Two Guys Grilling© Ground Pasilla (optional
Refrigerate for one twenty to thirty minutes


Fire up the smoker to 180 degrees
Place Pork Chops on Smoker rack (s)
Smoke until internal temperature is 160 degrees
Allow to rest for five minutes
