Carolina Pulled Pork
Pulled Pork is a popular dish anywhere you can find a pig. The South East has their own way of preparing and serving it. An unusual pink sauce and Cole Slaw are the favorite garnishes when served on a sandwich.
For a six pound pork shoulder.
Cut into Four Pieces
Season Liberally with The Dana Point Trinity©
Allow to Rest 20 Minutes
Sear on Hot Grill 5 Minutes, Turn Over
Sear 5 Minutes
Remove to Braising Pot
Braising liquid:
8 oz Fresh Orange Juice
16 oz Water
1 Head Garlic - Cloves Separated, Unpeeled, Gently Crushed
2 Tbs Mediterranean Sea Salt
1 Tbs Fine Ground White Pepper
2 Tbs Granulated Onion
1 Tsp Cumin Seed
Cover Tightly
Cook at 350 degrees for 1 1/2 to 2 hours
Allow to Cool
Using two Stout Forks, Pull Apart
Serve on Rolls with Pink Sauce and Cole Slaw
