California Swordfish Skewers
Quick, tasty, and health conscious, Two Guys Grilling© Swordfish Skewers are a real keeper. Thresher Shark is an excellent substitute for Swordfish. Use a serpentine technique for a cool presentation.
You Will Need:
Soaked Wood Skewers
Swordfish Cut To 1 to 1 1/2” Cubes
TGG© Cajun Spice
Avocado Oil
Sliced Bacon
What to Do:
Preheat Grill to Hot
Soak Wood Skewers in water or white wine for a half hour
Skewer Swordfish pieces
Season with TGG© Cajun Spice
Spritz all sides with Avocado oil
Skewer Bacon at the bottom of the row of fish and then serpentine wrap
the bacon around the fish, and secure through skewer at the top
Reduce Heat to Medium to Medium Hot
Grill Skewer Medium to Medium Hot 1 1/2 to 2 minutes
Turn Over
Grill Medium to Medium Hot 1 1/2 to 2 minutes (until done-starts to flake)
Remove to serving platter:
You can soak the wood skewers in water or you might take a chance on
wine or flavoring the water with spices. Discard the bacon or save it
for a vinaigrette…although we prefer to eat it.
Variations of this technique include TGG© Chile Chipotle Molido, Dill Seasoning, and Garlic Seasoning.
