Tri-Tip French Dip


The day before smoking prepare the Tri Tip as follows:

  1. Remove excess fat from Tri Tip
  2. Generously apply Two Guys Grilling Rub to both sides
  3. Press seasoning into Tri Tip before turning
  4. Cover in plastic and refrigerate overnight

The day you smoke:

  1. Sear on very hot grill 5 minutes each side
  2. Remove and let rest until grill is set for smoking
    Smoke until internal meat temperature is 150°
    (approx 2 ½ - 3 ½ hours)
  3. Let meat rest ten minutes
  4. Slice thinly across the grain
  5. Serve with Au Jus and rolls

Two Guys Grilling Rub
Season in this order:

  1. Kosher Salt
  2. Fine Ground White Pepper
  3. Granulated Onion
  4. Granulated Garlic
  5. Cajun Spice
  6. Dry Basil
  7. Italian Seasoning
  8. Dark Chili Powder
