Tri-Tip French Dip
The
day before smoking prepare the Tri Tip as follows:
- Remove excess fat from Tri Tip
- Generously apply Two Guys Grilling Rub to both sides
- Press seasoning into Tri Tip before turning
- Cover in plastic and refrigerate overnight
The day you smoke:
- Sear on very hot grill 5 minutes each side
- Remove and let rest until grill is set for smoking
Smoke until internal meat temperature is 150°
(approx 2 ½ - 3 ½ hours) - Let meat rest ten minutes
- Slice thinly across the grain
- Serve with Au Jus and rolls

Season in this order:
- Kosher Salt
- Fine Ground White Pepper
- Granulated Onion
- Granulated Garlic
- Cajun Spice
- Dry Basil
- Italian Seasoning
- Dark Chili Powder
